Ingredients
- ½ head lettuce (optional, I just use more spinach)
- 1 10 ounce bag fresh spinach, stemmed
- 10 slices bacon, fried crisp and crumbled
- 1 white onion, slivered
- 1 pint cottage cheese ←I leave out
- 1 pound fresh mushrooms, sliced
- 4 hard-boiled eggs, crumbled
Instructions
Mix all the above ingredients in the salad bowl you plan to serve the salad in. Serve with the following dressing
Dressing
- ½ cup cider vinegar
- ¼ cup sugar
- 1 tsp dry mustard
- 1 tsp salt
- ⅔ T chopped onion
- ⅔ cup oil
Instructions
Put everything except oil in blender. Start it at low speed and slowly add oil. Dressing can be made ahead of time and refrigerated in blender container. Turn blender on again briefly before putting on salad to re-blend.
