Apple Crumb Pie

This recipe comes from Parent magazine. The first time I made it, it was 4am and I was up with our first born. She had her days and nights reversed for the first few months so I found myself doing odd things in the middle of the night. My husband was happy to have hot apple crumble, fresh from the oven for breakfast that morning.

Ingredients
  • 1 15 ounce pie crust (I use Pillsbury™ Refrigerated Pie Crust)
  • 1/2 cup light brown sugar
  • 3 T flour
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 6 medium tart apples (granny smith or macintosh), pealed, cored and sliced
Topping Ingredients
  • 1/2 cup flour
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 6 T butter
  • whipped cream or vanilla ice cream optional
Instructions
  • Preheat oven to 425 degrees
  • Prepare pie crust according to directions using a 9″ pie pan
  • In a large bowl combine brown sugar, flour, cinnamon, nutmeg
  • Add slices of apples and toss until well coated
  • Spoon apple mixture into crust
  • For the topping
    1) in a small bowl, combine flour, brown sugar, cinnamon, nutmeg and butter
    2) sprinkle over apple filling
  • Bake 40-45 minutes on 425 degrees
