Why mess with greatness? The pumpkin pie recipe on the back of the One-Pie Pumpkin can is pretty awesome. The Pillsbury crusts are good too, though I am sure there are homemade crusts out there that would be even better; you have to use the 80/20 rule and ask yourself….is it worth the time and effort? Maybe.Sometimes.But. IMO not when you are getting a complete Thanksgiving meal together.
Ingredients
- 1 can One Pie Pumpkin
- 1 T cornstarch
- ½ tsp cinnamon
- ½ tsp nutmeg
- ½ tsp ginger
- ½ tsp salt
- 1½ T butter, melted
- 1 12oz can Evaporated Milk
- 1 cup sugar
- ⅛ cup molasses
- 2 eggs, beaten
- note: I do not add the lemon juice that the recipe on the can lists
Instructions
- I recommend prepping your pie crust first and then continuing.
- if you are using the Pillsbury crusts, follow the single filled pie crust directions
- Preheat oven to 450
- Sift sugar, cornstarch, salt, cinnamon, ginger, and nutmeg together
- Mix this with content of one can One Pie Pumpkin
- Add beaten eggs, melted butter, molasses, and milk
- Line a 9-inch pie plate, pour in contents and bake at 450
- After 15 minutes, reduce temperature to 350 and continue to bake for 50 minutes (or until toothpick comes out clean from center)
