Trader Joe’s Cornbread with Honey

There used to be a restaurant in Maynard called The Quarterdeck that had THE BEST cornbread. One night our waitress let it drop that they used Trader Joe’s Cornbread box mix and add honey to the batter. The affect of this is that it is more moist and slightly denser…not dry and crumbly. Ingredients

  • 1 box Trader Joe’s Cornbread Mix
  • 1 egg
  • ½ cup oil
  • ¾ cup milk
  • ¼-to- cup honey

Instructions

  • Preheat oven to 350
  • Follow directions on the box
    • beat egg, oil and milk in a large mixing bowl
    • mix in cornbread mix, stirring until moistened; do not overmix
    • add the honey and gently stir it into the batter
    • pour batter in greased 8x8x2 pan
    • bake until golden brown, about 35-40 minutes, or until a knife inserted in the center comes out clean.
