This is a home grown “recipe”. It is wicked simple and so delicious…if you love ginger and the flavor of roasted peanut oil….which I do, and thankfully, so does my family.
Ingredients
- baby bok choy, washed and separated
- 1-to-2 TBL fresh ginger, minced
- 2-to-3 TBL roasted peanut oil
- Kosher salt and freshly ground black pepper
Instructions
- In a wok style pan, add the roasted peanut oil over medium-to-low heat
- Add the ginger, and stir until fragrant, 3-4 minutes
- Add the bok choy, stir to coat in the roasted peanut oil
- Cover and let simmer for 1-2 minutes, then remove lid, stir again
- Cover and let simmer for 1-2 minutes, then remove lid, stir and season with salt and pepper
- Keep covering and stirring ever few minutes until the bok choy looks done (see pictures)
