Sautéed Spinach with Shallot

Simple and delicious. A perfect side with any meal.


  • olive oil
  • Kosher salt and freshly ground black pepper
  • fresh baby spinach ← I buy two of the regular sized plastic boxes for 4 people
  • 1 shallot, minced


  • heat a drizzle of olive oil in a large pan over medium heat
  • Add shallot and cook until softened, 2-3 minutes
  • Add spinach and toss until wilted, 2-3 minutes
  • Season with salt and pepper
  • Serve while hot!
