In 2014 we went to New Zealand and did a whirlwind trip visiting parts of the North and South Islands. On the South Island we stayed at Dock Bay Lodge in Te Anau. A beautiful B&B that served this delicious muesli each morning at breakfast. I think this is more like a granola than a muesli since it is baked uses honey as a sweetener.
Ingredients are in NZ products, but you can find US equivalents. There are no quantities listed for many of the dry ingredients, so. you just need to eyeball it. Does it look like a granola that you’d want to eat? If you love coconut, add a lot. If you don’t, then skip it.
Ingredients
- Dry ingredients
- 1 x 1kg bag of large grain or whole grain oats – yellow label
- 1 tsp salt
- Pine nuts
- Coconut
- Wheat germ or Bran Flakes
- Sliced almonds
- [optional, any of the following] if used, these are added AFTER the baking
- pumpkin seeds
- dried cranberries (for color)
- dried apricots
- sunflower seeds
- linseeds.
- Wet ingredients
- 2 cups maple syrup
- 1½ cups of salad or cooking oil
Instructions
- Preheat oven to 160c (320f)
- Combine all the dry ingredients in a large mixing bowl
- Mix together the wet ingredients and heat in microwave for 40 seconds
- Pour the wet mixture over the dry mixture and mix thoroughly
- Spread mixture out on a large baking pan(s) and toast in oven stirring every 5 minutes for 15-20 minutes
- Don’t overcook, you can tell by the coconut
- Leave to cool and then stir up
- [optional] Add pumpkin seeds, dried cranberries (for color), and dried apricots, sunflower seeds, linseeds.
