Peach Cobbler

This recipe is soo easy. I have only made it as a breakfast treat, but no reason you can’t make it as a dessert. I usually add a handful of blueberries and/or raspberries if I have them handy. It’s best when it’s still warm from the oven.

Ingredients
  • ¼ cup plus 2 TBL of butter
  • cups sugar – ¾ cup used for batter, ½ cup used for peaches
  • ¾ cup all-purpose flour
  • 2 tsp baking powder
  • Dash of salt
  • ¾ cup milk
  • 2 cups sliced peaches (nectarines work too), skins removed (3 peaches)
Instructions
  • Preheat oven to 350 degrees
  • Melt butter in a 2-quart baking dish – I use a round soufflé dish
  • Combine ¾ cup of sugar, flour, baking powder, and a dash of salt
  • Add milk and stir until mixed
  • Pour batter over butter in baking dish, but do not stir
  • Combine peaches and ½ cup sugar in separate bowl, stir to evenly distribute sugar
  • If you are adding blueberries and/or raspberries, I sprinkle them in at this point and give another stir
  • Spoon peaches over the batter, do not stir
  • Bake at 350 for 1 hour
