This recipe is soo easy. I have only made it as a breakfast treat, but no reason you can’t make it as a dessert. I usually add a handful of blueberries and/or raspberries if I have them handy. It’s best when it’s still warm from the oven.
Ingredients
- ¼ cup plus 2 TBL of butter
- 1¼ cups sugar – ¾ cup used for batter, ½ cup used for peaches
- ¾ cup all-purpose flour
- 2 tsp baking powder
- Dash of salt
- ¾ cup milk
- 2 cups sliced peaches (nectarines work too), skins removed (3 peaches)
Instructions
- Preheat oven to 350 degrees
- Melt butter in a 2-quart baking dish – I use a round soufflé dish
- Combine ¾ cup of sugar, flour, baking powder, and a dash of salt
- Add milk and stir until mixed
- Pour batter over butter in baking dish, but do not stir
- Combine peaches and ½ cup sugar in separate bowl, stir to evenly distribute sugar
- If you are adding blueberries and/or raspberries, I sprinkle them in at this point and give another stir
- Spoon peaches over the batter, do not stir
- Bake at 350 for 1 hour
